Ingredients

  • 1 kg chicken drumsticks You can use any part of chicken in this recipe
  • 1 tablespoon garlic paste
  • 1 tablespoon ginger paste
  • ½ teaspoon ground turmeric
  • 2 teaspoon garam masala
  • 1 tablespoon Kashmiri red chilly powder
  • 2 big dried red chillies ground to a coarse powder
  • 1 teaspoon ground fennel
  • ½ teaspoon ground cumin
  • 1 star anise ground to a coarse powder
  • 1 teaspoon white vinegar
  • 2 tablespoon rice flour
  • 2 tablespoon oil
  • 1 sprig curry leaves finely chopped
  • 2 sprigs coriander leaves crushed
  • Few drops of red food color
  • Salt to taste

Instructions

  • Place all the ingredients except chicken in a deep bowl. Mix well. Set aside.
  • Using a sharp knife, score the drumsticks on either side. Then coat them in the marinade. Cover and refrigerate for at least two hours or overnight, if you can.
  • Preheat oven to 180 degree Celsius.
  • Arrange the chicken drumsticks in a baking dish. Place it in the oven. Bake for 40-45 minutes.
  • Alternatively, you can also fry the chicken pieces.
