Having a stash of beautifully vibrant veggies in your refrigerator all the time means that you can whip up a quick side dish from scratch without relying on pre-packed store bought salads. Moreover, a delicious salad takes just minutes to go from chopping board to the dinner table.

This classic Arabic salad that’s very similar to Indian kachumber (cucumber) salad features just a few vibrant veggies alongside oil, lemon juice and seasonings. Best of all, this game changing salad recipe only takes mere minutes to prepare. It’s the quickest, easiest way to make your meal more vibrant and delicious. And if you like your salad spicy, don’t hesitate to add some chopped green chilies or a light sprinkle of red pepper (chili) flakes.

Simple, Delicious Arabic Salad Recipe

Let’s make this super simple salad made with real ingredients. The first step - chopping up all the veggies. Cucumbers, tomatoes, spring onions (scallions) - the delicious collection of vibrant salad veggies. Well, you can also add some bell peppers (capsicum) if you like.

And then the herbs. The traditional herb used in this recipe is, obviously, parsley. Finely chopped up parsley gives it another layer of flavor. When it comes the dressing, the idea is to keep it light and simple with a generous splash of olive oil and plenty of lemon juice. And in this case, use only freshly squeezed lemon juice, bottled version is a big ‘no’ to create the most flavorful salad.

And finally, the quintessential salt and pepper. The one ingredient that you can add to it to level up the flavor is sumac. Just a light sprinkle and you are done. Again, sumac is totally optional. Trust me, every spoonful of this salad is totally refreshing and so good for you.

Ingredients

  • 3 cucumbers deseeded and chopped
  • 2 large tomatoes deseeded and chopped
  • ¼ cup chopped spring onions scallions, green part only
  • ¼ cup chopped parsley
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • Juice of 1 lemon

Instructions

  • Place cucumbers, tomatoes, spring onions (scallions) and parsley in a bowl.
  • Season with salt and pepper.
  • Add olive oil and lemon juice. Toss to combine.
  • Serve immediately.

Notes

    1. You can add a sprinkle of sumac if you like
    2. Add more veggies like onions, bell peppers (capsicum) and radish to make this extra nutritious.
    3. Apart from parsley, mint is also a great addition to this salad
    4. Do not use English cucumbers in this recipe
    5. This is a great side for Middle Eastern dishes like kabsa, kebabs and mussakhan
