deseeded and chopped

deseeded and chopped

chopped spring onions
scallions, green part only

Salt and pepper to taste

olive oil

Juice of 1 lemon
Instructions
Place cucumbers, tomatoes, spring onions (scallions) and parsley in a bowl.
Season with salt and pepper.
Add olive oil and lemon juice. Toss to combine.
Serve immediately.

You can add a sprinkle of sumac if you like
Add more veggies like onions, bell peppers (capsicum) and radish to make this extra nutritious.
