The deliciousness of a simple cake is undoubtedly hidden in the details. I’m talking about the ingredients used in the cake especially the flavors that impart the beautiful aroma and taste. In short, the secret to making the perfect cake certainly relies on the flavors you choose. So remember to keep an eye on the details to make sure you’re getting the right balance of flavors.

This classic Portuguese orange cake is light, moist and super delicious. Fresh orange is the star of this cake making it super flavorful and amazingly delicious. Olive oil also imparts a lovely flavor and light texture to the cake.

Apart from the basic ingredients like flour, eggs, baking powder and sugar, you’ll also need the key elements, oranges and olive oil to make this beautiful cake. This Portuguese version of orange cake is loaded with the freshness of oranges that makes them so good.

How To Make Portuguese Orange Cake

Start with sifting the dry ingredients- flour, baking powder and salt- into a bowl. The second step is combining all the wet ingredients. First, beat the eggs until combined, and then beat in the sugar. When the mixture turns pale, you can add in flour mixture and olive oil. Add them alternatively so the flour mixture is incorporated into the cake batter.

Next up, add in the key flavors - orange zest and orange juice. The lovely orange flavor comes from 4 large oranges in this recipe. Ideally, you’ll need approximately 1 cup of orange juice in the batter. So, you’ll need about 4-5 oranges depending on their size.

Once the batter is ready, pour it into a cake tin, and bake for about 1 and ¼ hours. If the top of the cake starts to brown before the inside cooks, cover the tin lightly with aluminum foil.

Serve this Portuguese orange cake sprinkled with powdered (icing) sugar and a dollop of whipped cream. Yum!

Ingredients

  • 3 cups all purpose flour plain flour
  • 1 and ½ teaspoon baking powder
  • 1 teaspoon salt
  • 4 large eggs
  • 2 cups granulated sugar caster sugar
  • ¾ cup mild extra virgin olive oil
  • 3 large oranges zest and juice 2 tablespoons zest and 1 cup (250 ml) juice
  • Powdered sugar (icing sugar) and whipped cream to serve

Instructions

  • Preheat oven to 180C / 375F. Grease and line a 22 cm deep springform cake tin. Set aside.
  • Sift flour, baking powder and salt into a large bowl. Set aside.
  • Place eggs in a large bowl. Using an electric mixer, beat at medium-high speed for about 1 minute or until just combined.
  • Add sugar. Beat until thick and pale.
  • Add ¼ part of flour mixture and half of olive oil. Beat until combined.
  • Add the remaining flour and oil alternately, starting and ending with flour.
  • Add orange zest and juice. Beat for about 2 minutes or until just combined.
  • Pour batter into cake tin. Bake for 1 and ¼ hours or until a skewer inserted into the center of the cake comes out clean.
  • If the top of the cake starts to brown too quickly, cover the pan with foil loosely.
  • Turn onto a wire rack to cool completely.
  • Dust with powdered (icing) sugar and serve with a dollop of whipped cream.
