How To Make Chinese Tomato Egg Stir Fry
Step 1 – Scramble the eggs. Before adding eggs to the pan, I like to lightly whisk them with a little water. The addition of water makes them super fluffy and delicious. Add the whisked eggs to a lightly oiled hot pan and move it gently to create extra fluffy scrambled eggs. Transfer this to a plate.
Step 2 – Cook the tomatoes in the same pan. Lightly oil the pan, and fry chopped garlic and scallions or spring onions. Make sure you only use the white part of the spring onions. I have used 2 large tomatoes roughly sliced into thick wedges. Sauté this for about a minute or two until the tomatoes are wilted and cooked.
Step 3 – Add the seasonings. You will need oyster sauce and sesame oil alongside a touch of sugar, salt and ground white pepper. Sauté for another minute just to incorporate the flavors into the tomatoes.
Step 4 – Stir in scrambled eggs and garnish. This step needs to be super quick. And finally, garnish with plenty of spring onions.

10 Minute Chinese Tomato Egg Stir Fry | Video
A delicious light lunch or breakfast featuring tomatoes and scrambled eggs flavored with Asian sauces. Serve warm!
Ingredients
- 1 tablespoon oil
- 6 eggs
- 2 teaspoons water
- 2 garlic cloves peeled and chopped
- 2 tablespoons white part of spring onions (scallions), chopped
- 2 large tomatoes, diced
- 1 teaspoon oyster sauce
- 1/2 teaspoon sesame oil
- 1/4 teaspoon sugar
- 1/2 teaspoon ground white pepper (white pepper powder)
- Salt to taste
- Chopped spring onions (scallions), to garnish
- Steamed rice, to serve
Instructions
- Crack eggs into a small bowl. Add water. Season with salt. Whisk until the mixture has just one consistency.
- Meanwhile heat 1/2 tablespoon oil in a large skillet or frying pan. Add egg mixture. Let it sit, without stirring, for about 20 seconds. Gently stir with a wooden spoon, lifting and folding it over from the bottom of the pan.
- Repeat this process until the eggs are softly set and slightly runny in places. Remove from pan. Set aside.
- To the same pan, add the remaining 1/2 tablespoon oil. When hot, add garlic and spring onion (scallion) whites. Sauté, stirring, for a minute.
- Add tomatoes. Sauté, stirring occasionally, for about 2 minutes or until the tomatoes are cooked.
- Add oyster sauce, sesame oil, sugar and ground white pepper. Season with salt. Stir to combine. Sauté for 1 minute.
- Add scrambled eggs. Stir gently to combine.
- Garnish with chopped spring onions (scallions).
- Serve with steamed rice.
Notes
- Serving suggestions: steamed rice (traditional side), in sandwiches or with breakfast toast
- Make sure you stir the eggs gently to make perfect fluffy eggs.
- Add a light sprinkle of red chili flakes (red pepper flakes) if you like
