A staple dish from the northeastern state of India, aloo pitika, is basically the spiced version of simple classic mashed potatoes. It’s healthy, super delicious and can be easily made with a few simple ingredients.
This signature dish of Assam highlights the unique flavor of mustard oil combined with fluffy potatoes. The addition of fresh green chilies and onions accentuates the beautiful aroma and flavor of this amazingly delicious side dish.
How To Make Spicy Mashed Potatoes
Like the classic mashed potatoes, the recipe starts with cooking the potatoes in salted boiling water. But before you start cooking, peel the potatoes and cut them into large chunks. This speeds up the cooking process and reduces cooking time.
Now, bring a large pot of water to boil, season with salt, and add the potatoes. Let it cook until tender. The potatoes need to be well cooked so they can be mashed into a smooth purée.
Once the potatoes are cooked, drain to remove excess water. Now, start mashing the potatoes. You can use a potato masher to do this. Again, this process is done in two steps - first, roughly mash the potatoes. Add green chilies and onions, and mash again. Make sure they are very finely chopped.
Next up, the final step of making this spicy mashed potatoes - addition of mustard oil. The unique flavor of mustard oil is what makes this so flavorful. Delicious!
