finely chopped red onions

finely chopped green chilies

finely chopped coriander
cilantro leaves

mustard oil

to taste
Instructions
Peel potatoes and cut them into large chunks.
Cook potatoes in salted boiling water for about 20 minutes or until very tender. Drain excess water.
Using a potato masher, roughly mash the potatoes.
Add red onions, green chilies and coriander (cilantro) leaves. Season with salt and pepper.
Mash again until smooth and fluffy.
Add mustard oil. Stir to combine.
Serve with rice and dal (lentil curry), roti or roast turkey
