Ingredients

  • 6 large potatoes
  • ¾ cup finely chopped red onions
  • 1 tablespoon finely chopped green chilies
  • 1 tablespoon finely chopped coriander cilantro leaves
  • 1 tablespoon mustard oil
  • Salt and pepper to taste

Instructions

  • Peel potatoes and cut them into large chunks.
  • Cook potatoes in salted boiling water for about 20 minutes or until very tender. Drain excess water.
  • Using a potato masher, roughly mash the potatoes.
  • Add red onions, green chilies and coriander (cilantro) leaves. Season with salt and pepper.
  • Mash again until smooth and fluffy.
  • Add mustard oil. Stir to combine.
  • Serve with rice and dal (lentil curry), roti or roast turkey
