Easy pad Thai - A no-fuss weeknight dinner idea with very little preparation and less cooking time. These noodles feature a simple combination of rice noodles, chicken, shrimp and few veggies tossed in a lip-smacking Thai style stir-fry sauce. Damn delicious!

If you’re a regular reader of this blog, you might have noticed that I’ve a serious obsession with quick and easy recipes. Honestly, such recipes are a boon to my hectic daily schedule. So, I just want to add one more super easy recipe to this collection.
An easy pad Thai recipe. And in this case, chicken pad Thai. Rice noodles and chicken tossed in Thai style sauce. Oh, and a few shrimp to add that extra seafood flavor to the noodles. Plus, a handful of crushed peanuts sprinkled on top. For me, it’s a must. I love the crunchy texture of peanuts against the soft noodles. Trust me, dinner can’t get better than this.
Well, if you’ve never ever had traditional Thai food, let this dish introduce you to the wonderful flavors of the exotic cuisine. These noodles are guaranteed to take you on an extraordinary flavor journey right through the streets of Thailand. On the other hand, if you are a huge fan of Thai cuisine, whip up a batch of homemade noodles for a quick dinner.
As you know, noodles are always easy to prep, and are highly nutritious when loaded with your favorite protein and veggies. Customization is the key secret here. Your favorite protein. Your favorite veggies. Just throw in whatever you have on hand, and you have your favorite version of this easy pad Thai recipe.
Now, let’s move on and talk about the classic version of this favorite Asian street food. Pad Thai noodles or flat rice noodles makes the core ingredient of this recipe. Just prep them according to the directions on the package.
Next up, the protein. I had a non-vegetarian version of these noodles on my mind. Chicken and prawns certainly make these noodles more nutritious. We’ll also stir fry spring onions and fresh bean sprouts to add to the noodles.
One important element that makes this pad Thai extraordinarily delicious is the stir fry sauce. A delectable combo of fish sauce, brown sugar, rice vinegar, sweet chili sauce and red chili powder. Just toss all the other ingredients including the noodles in this delicious sauce.

Easy Pad Thai | Video
Ingredients
Sauce:
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon rice vinegar
- 2 teaspoon sweet chili sauce
- ½ teaspoon red chili powder
- 2 tablespoon water
Chicken pad thai:
- 200 g pad thai noodles
- 2 tablespoon oil peanut oil preferred
- 1 chicken breast 250g, cut into thin strips
- 1 teaspoon chopped garlic
- 80 g shrimp peeled and deveined
- 3 spring onions cut diagonally
- 100 g fresh bean sprouts
- 1 egg lightly whisked
- Spring onions to garnish
Instructions
Prepare noodles:
- Prepare pad thai noodles according to packet directions. Set aside.
Sauce:
- Place fish sauce, brown sugar, rice vinegar, chili powder and sweet chili sauce and water. Stir to combine. Set aside.
Pad thai noodles:
- Heat 1 tablespoon oil in a wok or large frypan over high heat. Add chicken. Stir fry for 3-4 minutes or until chicken pieces are browned and cooked through. Remove from heat. Set aside.
- Heat 1 tablespoon oil in the same wok over high heat. Add garlic. Stir fry for a minute or until aromatic. Add shrimp, and stir fry for 2 minutes or until the shrimp changes color. Add spring onions and bean sprouts. Stir fry for a minute.
- Add noodles, cooked chicken and sauce. Toss. Heat through. Push noodles to one side of the pan. Pour in egg onto the empty side of pan. Cook, stirring, for 30 seconds. Combine scrambled egg with the noodles. Serve immediately.
