And sometimes, you need a quick and easy recipe with all the deliciousness, and that’s where this “magic prep” idea comes in.
This mixed berry cobbler recipe incorporates a layer of cake-like sweet batter topped with frozen berries. So all you have to do is layer them in a deep baking dish and bake. It requires about 50 minutes to cook, and you’ll be amazed to see how easy it is to whip up a warm dessert for cold winter nights. Personally, I love to serve this with a generous scoop of ice cream. Cream is a great option too.
Mixed Berry Cobbler Recipe
Batter – A simple mix of flour, sugar and milk. And don’t forget a tiny pinch of salt. Whisk flour and sugar in a bowl before adding in milk to form smooth batter.
Bake – We have three layers in this recipe: melted butter, batter and frozen berries. You’ll need melted butter to cover the base of the baking dish. Pour batter into the dish. Add berries. Bake this for about 50 minutes. During the cooking process, the fruits release the juices creating a delicious puddle of berries beneath the dough layer. So easy to make!

Easy Mixed Berry Cobbler
Heavenly dessert loaded with your favorite berries. Serve with vanilla ice cream for the perfectly warm after dinner treat!
Ingredients
- 1 cup self raising flour
- 3/4 cup granulated (caster) sugar
- A pinch of salt
- 3/4 cup milk
- 4 tablespoons melted butter
- 2 cups frozen or fresh mixed berries ( I used frozen)
- Vanilla ice cream or whipped cream, to serve
Instructions
- Preheat oven to 180 C / 350 F.
- Place flour, sugar and salt in a large bowl.
- Whisk to combine.
- Whisk in milk to make smooth batter. Set aside.
- You will need 8 x 8 inch baking dish to make this cobbler.
- Pour melted butter into the dish. Spread evenly, so it covers the base of the dish.
- Add batter.
- Scatter berries over batter.
- Bake for about 50-60 minutes or until lightly browned and the fruit bubbles.
- Serve warm or at room temperature with ice cream or whipped cream.
Notes
- Use any firm fruit you like - peaches, nectarines, apples
- Do not thaw frozen berries
- Use more or less sugar to adjust the sweetness from the berries
