Easy Mixed Berry Cobbler

Ingredients

  • 1 cup self raising flour
  • ¾ cup granulated sugar caster sugar
  • A pinch of salt
  • ¾ cup milk
  • 4 tablespoons melted butter
  • 2 cups frozen or fresh mixed berries I used frozen
  • Vanilla ice cream or whipped cream to serve

Instructions

  • Preheat oven to 180 C / 350 F.
  • Place flour, sugar and salt in a large bowl.
  • Whisk to combine.
  • Whisk in milk to make smooth batter. Set aside.
  • You will need 8 x 8 inch baking dish to make this cobbler.
  • Pour melted butter into the dish. Spread evenly, so it covers the base of the dish.
  • Add batter.
  • Scatter berries over batter.
  • Bake for about 50-60 minutes or until lightly browned and the fruit bubbles.
  • Serve warm or at room temperature with ice cream or whipped cream.

Notes

  • Use any firm fruit you like - peaches, nectarines, apples
  • Do not thaw frozen berries
  • Use more or less sugar to adjust the sweetness from the berries
