Cowboy caviar, also known as Texas caviar, is a super delicious salad packed with nutritious ingredients. The lip-smacking dressing is the highlight of this salad recipe. Don’t you love all those beautifully vibrant colored vegetables and legumes?
How To Make Cowboy Caviar
This salad is a mixture of vibrant veggies and nutrient-packed legumes. The bell peppers (capsicum), red onions, avocados and jalapeños are finely chopped to super tiny pieces so they will absorb the intricate flavors of the dressing. I have also added a can of corn kernels, but feel free to use fresh corn or even grilled corn.
The legumes used in this cowboy caviar recipe include black eyed beans (peas) and black beans. They are easily available in two varieties – dried or canned. With dried beans, make sure you soak them overnight before cooking to tender perfection. Black eyed ‘peas’ and black eyed ‘beans’ are same.
Now the dressing. It’s basically an Italian dressing with an American twist. To be exact, this Italian-American dressing is totally sensational. The basic ingredients include olive oil, lemon juice and red wine vinegar. The addition of cumin adds a delicious spice touch to the dressing while the optional maple syrup imparts the sweetness.

Ingredients
Salad:
- 1 can (420 g) black beans, drained and rinsed
- 1 can (420 g) black eyed peas (beans), drained and rinsed
- 1 can (420 g) corn kernels, drained and rinsed
- 1/2 cup chopped red bell pepper (capsicum)
- 1/2 cup chopped yellow bell pepper (capsicum)
- 1 cup chopped red onion
- 1 large tomato, finely chopped
- 1 avocado, pitted and chopped
- 2 jalapeños, seeds removed and chopped
- 2 garlic cloves, minced
- 1/4 cup chopped coriander (cilantro) leaves
Dressing:
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Juice from 1 lemon
- 1 teaspoon maple syrup (optional)
- 1/2 teaspoon ground cumin
Instructions
- Place black beans, black eyed peas (beans), corn kernels, bell peppers (capsicum), red onion, avocado, jalapeños, garlic and coriander (cilantro) leaves. Set aside.
- To make the dressing, place olive oil, red wine vinegar, lemon juice, ground cumin and maple syrup (if using) in a small container with lid. Season with salt and pepper. Close with lid, and shake well to combine.
- Pour dressing in the salad. Toss to combine.
- Serve with tortilla chips.
Notes
- Serve this salad with tacos or as a side
- Sub red wine vinegar with white wine vinegar if you like
- Black eyed peas are also called black eyed beans
- Customize with other ingredients like mango, cucumbers etc
- Substitute ground cumin with taco seasoning if you like
- Add a little cayenne pepper for extra heat
