Place black beans, black eyed peas (beans), corn kernels, bell peppers (capsicum), red onion, avocado, jalapeños, garlic and coriander (cilantro) leaves. Set aside.
To make the dressing, place olive oil, red wine vinegar, lemon juice, ground cumin and maple syrup (if using) in a small container with lid. Season with salt and pepper. Close with lid, and shake well to combine.
Pour dressing in the salad. Toss to combine.
Serve with tortilla chips.
