A loaded sandwich is simply one of the best ways to level up a flavor packed lunch. I really enjoy a great sandwich with layers of contrasting flavors between crisp buttered bread slices. Well, there are plenty of varieties of sandwiches, both classic and modern. And they never fail to bring in all kinds of flavor combinations to satisfy your taste buds.
Chicken junglee sandwich. A spiced version of your favorite chicken mayo sandwich. The vegetarian counterpart of this sandwich is a popular Indian street food and it’s loaded with veggies like bell peppers (capsicum), corn, onions, tomatoes, and grated paneer. We are going to add some boiled shredded chicken to the mix to create a protein packed sandwich.
Chicken Junglee Sandwich Recipe
First, let’s make the filling for this sandwich. It basically consists of two layers – one with chicken mayo mixture and the other with sliced veggies.
To make the chicken mayo mixture, all you need to do is combine boiled and shredded chicken with corn kernels, bell peppers and onion. To spice up the mixture, you can add a little schezwan sauce and chat masala. Chat masala is the key ingredient that adds the much needed spices to the sandwich.
Next, butter the bread slices and spread with a generous amount of green chutney. Choose your favorite white, wholemeal or multigrain bread. I decided to go with the multigrain version. With the green chutney, go with either homemade or store bought.
Top one bread slice with chicken mayo mixture and another bread slice. Now, the second layer of chicken junglee sandwich – sliced cucumbers, onions and tomatoes. Don’t forget to sprinkle generously with chat masala. Top with the third bread slice.
Finally, toast. You can always toast the bread in a sandwich maker or grill. But I prefer a pan with loads of butter. Once both sides are crisp and brown, slice and serve with potato chips or French fries.

Chicken Junglee Sandwich | Spiced Chicken Mayo Sandwich | Video
This spiced version of chicken mayo sandwich is guaranteed to become your favorite! Thanks to succulent chicken, creamy mayo, schezwan sauce, chat masala, and plenty of vibrant veggies.
Ingredients
- 1 chicken breast (approximately 200 g)
- 3 tablespoons boiled corn kernels
- 2 tablespoons chopped bell peppers (capsicum)
- 2 tablespoons chopped onions
- 2 tablespoons grated carrots
- 5 tablespoons mayonnaise
- 1/2 cup grated cheese
- 1 tablespoon schezwan sauce
- 3 teaspoons chat masala
- 6 bread slices (3 for each sandwich)
Instructions
- Cut chicken breast into large chunks. Place them in a large saucepan with boiling water. Season with salt. Let it simmer over medium-high heat until chicken is cooked through. This will take about 5-10 minutes. Drain.
- Transfer to a large bowl. Using a fork, shred chicken.
- Add corn kernels, bell peppers (capsicum), onions, carrots, mayonnaise, cheese, schezwan sauce and 2 teaspoons chat masala. Season with salt and pepper. Set aside.
- Spread softened butter on one side of 3 bread slices. Top with green chutney.
- Place half of chicken mixture on one bread slice. Top with another bread slice, with the buttered side facing down.
- Spread with butter and green chutney.
- Top with layers of cucumbers, onions and tomatoes.
- Sprinkle with 1/2 teaspoon chat masala.
- Top with the third slice of bread, with the buttered side facing down. Press gently.
- Repeat with the remaining chicken mixture, bread slices, softened butter, green chutney, vegetables and chat masala. Set aside.
- Heat 25g butter in a pan over medium heat.
- Cook sandwiches (one at a time) until golden.
- Flip it over to cook the other side.
- Add more butter if needed.
- Serve with potato chips.
Notes
- Add more veggies like grated paneer, potatoes, beetroot and celery
- Use sriracha mayonnaise to bring in the heat
- You can add avocados to the top layer
- Add a sprinkle of red chili (red pepper) flakes if you like
