Chicken Junglee Sandwich | Spiced Chicken Mayo Sandwich | Video

This spiced version of chicken mayo sandwich is guaranteed to become your favorite! Thanks to succulent chicken, creamy mayo, schezwan sauce, chat masala, and plenty of vibrant veggies.

Ingredients

  • 1 chicken breast approximately 200 g
  • 3 tablespoons boiled corn kernels
  • 2 tablespoons chopped bell peppers capsicum
  • 2 tablespoons chopped onions
  • 2 tablespoons grated carrots
  • 5 tablespoons mayonnaise
  • ½ cup grated cheese
  • 1 tablespoon schezwan sauce
  • 3 teaspoons chat masala
  • 6 bread slices 3 for each sandwich

Instructions

  • Cut chicken breast into large chunks. Place them in a large saucepan with boiling water. Season with salt. Let it simmer over medium-high heat until chicken is cooked through. This will take about 5-10 minutes. Drain.
  • Transfer to a large bowl. Using a fork, shred chicken.
  • Add corn kernels, bell peppers (capsicum), onions, carrots, mayonnaise, cheese, schezwan sauce and 2 teaspoons chat masala. Season with salt and pepper. Set aside. 
  • Spread softened butter on one side of 3 bread slices. Top with green chutney.
  • Place half of chicken mixture on one bread slice. Top with another bread slice, with the buttered side facing down.
  • Spread with butter and green chutney.
  • Top with layers of cucumbers, onions and tomatoes.
  • Sprinkle with ½ teaspoon chat masala.
  • Top with the third slice of bread, with the buttered side facing down. Press gently. 
  • Repeat with the remaining chicken mixture, bread slices, softened butter, green chutney, vegetables and chat masala. Set aside.
  • Heat 25g butter in a pan over medium heat.
  • Cook sandwiches (one at a time) until golden.
  • Flip it over to cook the other side.
  • Add more butter if needed.
  • Serve with potato chips.

Notes

  • Add more veggies like grated paneer, potatoes, beetroot and celery 
  • Use sriracha mayonnaise to bring in the heat
  • You can add avocados to the top layer
  • Add a sprinkle of red chili (red pepper) flakes if you like
