Cut chicken breast into large chunks. Place them in a large saucepan with boiling water. Season with salt. Let it simmer over medium-high heat until chicken is cooked through. This will take about 5-10 minutes. Drain.
Transfer to a large bowl. Using a fork, shred chicken.
Add corn kernels, bell peppers (capsicum), onions, carrots, mayonnaise, cheese, schezwan sauce and 2 teaspoons chat masala. Season with salt and pepper. Set aside.
Spread softened butter on one side of 3 bread slices. Top with green chutney.
Place half of chicken mixture on one bread slice. Top with another bread slice, with the buttered side facing down.
Spread with butter and green chutney.
Top with layers of cucumbers, onions and tomatoes.
Sprinkle with ½ teaspoon chat masala.
Top with the third slice of bread, with the buttered side facing down. Press gently.
Repeat with the remaining chicken mixture, bread slices, softened butter, green chutney, vegetables and chat masala. Set aside.
Heat 25g butter in a pan over medium heat.
Cook sandwiches (one at a time) until golden.
Flip it over to cook the other side.
Add more butter if needed.
Serve with potato chips.
