Bombay Frankie | Indian Burrito

Bombay frankie. For a delicious meal that the whole family will love, try these street style wraps bursting with classic flavors. Prep the filling with potatoes or chicken tossed with aromatic frankie masala. Spread the wraps with schezwan sauce, add the filling, and then top with cabbages and green chilies in vinegar. Add a fiery spicy kick with a light sprinkle of chat masala.

Why I Love These Wraps

Let’s be honest: street foods are pure magic combining both taste and comfort. And for me, it’s one of the few things that deliver instant gratification, just because they are unbelievably tasty and totally addictive. I have always been a huge fan of  street eats, and at the moment, these frankies are firmly in rotation on the menu. 

These Indian burritos are quite literally designed with easy customization on mind. The perfect frankie is all about the soft wrap, crunchy veggies, the flavorful masala spiked filling, and chat masala. The best part? Customizable filling ranging from potatoes, paneer, tofu, chicken, lamb, egg or vegetables. With the wrap, the traditional choice is soft, flaky paratha, however, you can also opt for tortillas or leftover rotis.

  • Chat masala - The basic seasoning of Indian street food.

How To Make Bombay Frankie

Make the filling - All you need to do is toss your favorite filling, chicken, paneer, potatoes, lamb or tofu with frankie masala.

Make the wraps - The base element is parathas or tortillas. You can spread them with schewan sauce or even ketchup (tomato sauce), then add the filling and other toppings. Finally, sprinkle with some chat masala, and roll up to make burritos.

Ingredients

Filling:

  • 1 tablespoon oil
  • 1 small onion, sliced
  • 2 garlic cloves, chopped
  • 2 tablespoons frankie masala
  • ½ cup crushed tomatoes
  • 3 potatoes boiled or 300 g chicken sliced
  • Salt to taste

Vinegar chilies:

  • ¼ cup white vinegar
  • 2 green chilies, sliced

Wraps:

  • 6 wraps
  • ¼ cup schezwan sauce
  • 1 cup shredded green cabbage
  • 1 cup shredded red cabbage
  • ¼ cup spicy mayo
  • 2 tablespoons chat masala

Instructions

Filling:

  • Heat oil in a frying pan over medium-high heat.
  • Add onions. Saute, stirring occasionally, for 2 minutes or until soft and translucent.
  • Add garlic. Saute, stirring, for 1 minute or until aromatic.
  • Add frankie masala. Saute, stirring, for about 1 minute.
  • Add tomatoes. Saute, stirring, for about 2 minutes.
  • If using potatoes, add boiled potatoes, mash the potatoes, and toss with the spices. Season with salt.
  • If using chicken, add chicken, and cook for about 7-10 minutes. Season with salt.

Vinegar chilies:

  • Add green chilies to white vinegar.

Make frankies:

  • Place one wrap on a flat work surface.
  • Spread with a teaspoon of schezwan sauce.
  • Add potato or chicken filling.
  • Top with cabbages, green chilies and spicy mayo.
  • Sprinkle with chat masala
  • Roll.
  • Repeat with the remaining wraps, filling and toppings.
