Savory masala scones. The classic scone gets a spicy makeover with the addition of chilies, ginger and herbs. Deliciously fluffy and light on the inside with a slightly crispy outer covering, these beautiful savory scones are deceptively simple and easy to make!
I really love fresh baked scones slathered with jam and cream. It’s a classic dream. But have you ever tried a savory scone flavored with chilies and fresh ginger? If you are not into sweet scones or just want to try a new flavor, these are absolutely perfect for you.
How to make these fluffy and spicy savory scones
Start with rubbing in butter at room temperature to sifted flour, baking powder, baking soda and salt. The resulting mixture should resemble breadcrumbs. The spicy touch for these masala scones come from fresh grated ginger and green chilies.
In order to make these scones more delicious, I decided to add in some chopped fresh herbs – in this case, coriander (cilantro) leaves and curry leaves. Curry leaves are totally optional in this recipe, but I highly recommend the addition of coriander (cilantro) leaves.
Now, you need to bring everything together, and the perfect binding agent here is yogurt. The one and only thing that differentiates these scones from their traditional counterparts is egg. Since the yogurt imparts a very light and fluffy texture to these masala scones, I think the dough is perfect without eggs.
Again, we are going to make mini scones, so roll out small balls and flatten them slightly before placing them on a baking tray. While baking, the scones will rise creating a soft and fluffy interior. Honestly, I’m totally obsessed with the crispy outer layer of these scones.
How to serve masala scones
These are perfect with your afternoon tea, but slather with some mint chutney for next level deliciousness. A generous spread of butter would be equally delicious. Or serve with your favorite winter soup.
