Ingredients

  • 1 and ½ cups all purpose flour plain flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • A pinch of salt
  • 100 g butter softened
  • ¼ teaspoon grated ginger
  • ½ teaspoon chopped green chilies
  • 2 tablespoons coriander cilantro leaves
  • 1 teaspoon chopped curry leaves
  • 5 tablespoons yogurt

Instructions

  • Preheat oven to 170C / 325F. Line a baking tray with baking paper.
  • Sift flour, baking powder, baking soda and salt into a large bowl. Using your fingertips, rub butter into flour until it resembles breadcrumbs.
  • Add ginger, green chilies, coriander (cilantro) and curry leaves. Stir to combine. Make a well in the center. Add yogurt. Knead gently to make smooth dough.
  • Roll 10 balls out of the mixture. Flatten slightly and place on the baking tray. Bake for 20-30 minutes.
  • Serve with mint chutney or with soup.
