How To Make Indian Mango Chutney
Prep the ingredients - Peel and dice mangoes into small pieces. You can also use frozen mangoes.Finely chop onions, ginger, and garlic.
Make chutney - Start with sautéing the onions, but don’t brown them. Next, ginger and garlic go in. Add a little curry powder to level up the flavors. Brown sugar goes in next, followed by vinegar. When the mixture gets slightly thick, cook mangoes until they get mushy and glossy.


Indian mango chutney
Ingredients
- 1 tablespoon oil
- ¼ cup chopped onions
- ½ teaspoon minced garlic
- ½ teaspoon minced ginger
- ½ teaspoon curry powder
- 1 tablespoon brown sugar
- ½ cup apple cider vinegar
- ½ cup water
- ¼ teaspoon cayenne pepper
- ½ teaspoon ground turmeric
- 2 cups chopped ripe mangoes
- Salt to taste
Instructions
- Heat oil in a large frying pan over medium heat.
- Add onions. Saute, stirring occasionally, for about 2-3 minutes or until soft. Make sure the onions don’t brown.
- Add garlic and ginger. Saute, stirring, for about 30 seconds or until aromatic.
- Add curry powder. Saute, stirring, for 30 seconds.
- Add brown sugar. Stir to combine.
- Add vinegar and water. Stir to combine. Simmer for about 2-3 minutes or until slightly thick.
- Season with salt.
- Add cayenne pepper and turmeric. Add mangoes. Stir to combine.
- Cook, stirring occasionally, until the mangoes release juice and turn mushy. Add a little water if required.
Notes
- Storage - Store in an airtight container in the refrigerator for up to 2-3 weeks.
