Ingredients

  • ½ cup thinly sliced red cabbage
  • ½ cup thinly sliced green cabbage
  • ½ cup sliced red onion
  • ½ cup carrots, cut into thin sticks
  • 1 ripe firm mango, peeled and thinly sliced
  • 1 tablespoon rice vinegar
  • Juice from 1 small lime
  • 2 tablespoons coriander leaves (cilantro) optional
  • Salt and pepper to taste

Instructions

  • Place red cabbage, green cabbage, onions, carrots and mango in a large bowl.
  • Add rice vinegar and lime juice.
  • Toss.
  • Season with salt and pepper.
