Honey mustard sausage tray bake. A touch of honey and mustard amps up the flavor of classic sausage bake. This easy to cook tray bake is enriched with flavors from sausages and veggies alongside honey mustard sauce and a spicy kick from red chili flakes. Ready in just 30 minutes!

If you love sausages and want to minimise your time in the kitchen, I think baking them is truly the best idea ever. Throw in a few veggies alongside sausages, and you have a complete meal. As for which type of sausages to choose, well, it’s certainly your choice. With the recipe, there’s one that I have added to my repertoire, and it features one of my favorite flavor combo. 

Seriously, this recipe is a total game changer with a delectable honey mustard sauce, tender yet delicious sausages, and vibrant veggies. In short, a luxe meal for everyday dinner. The sausages are browned evenly on all sides before adding them to the baking tray. This imparts a crisp outside and moist inside deliciousness. Who knows?   • Sausages - Choose your favorite, chicken, beef, pork, or even plant based.
  • Honey mustard sauce - The unique combo of sweet honey and mustard. You can use wholegrain or dijon mustard in this recipe.
  • Red chili flakes - This is totally optional, but it adds a beautiful contrast to the sweet honey.
  • Vegetables - Tray bakes are incomplete without vegetables, so feel free to add your favorite roasting vegetables. I have opted for potatoes, carrots, onions and vibrant cherry tomatoes.

How To Make Honey Mustard Sausage Tray Bake

Brown sausages - Before baking, you will need to brown the sausages evenly on all sides to lock in the moisture. You can do this in a frying pan over stove top. Just flip the sausages and cook until you get a beautiful brown hue.

Make honey mustard sauce - It’s a simple combo of mustard and honey. I used equal quantities of honey and mustard, with a pinch of red chili flakes to bring in heat. 

Roast vegetables - Toss the vegetables with the honey mustard sauce, a little vegetable oil and the essential salt and pepper and bake until cooked through. I like to add a few cloves and a sprig of rosemary for extra flavor.

Add the sausages - Place sausages in the baking tray alongside the veggies and bake for another 10 minutes.

Ingredients

Honey mustard sauce:

  • 2 tablespoons honey
  • 2 tablespoons dijon mustard
  • 1 teaspoon dried red chili flakes

Tray bake:

  • 3 potatoes peeled, cut into 2 cm pieces
  • 1 red onion cut into wedges
  • 2 carrots cut into 2cm pieces
  • 2 tablespoons vegetable oil
  • 2 garlic cloves peeled
  • 1 sprig of rosemary
  • 500 g sausages, beef, pork or chicken
  • 200 g cherry tomatoes
  • Parsley to garnish
  • Salt and pepper to taste

Instructions

  • Preheat oven to 200 C or 400 F.
  • To make the honey mustard sauce, place honey, mustard and red chili flakes in a small bowl. Stir to combine.
  • Place potatoes, red onions and carrots in a large bowl. Add honey mustard sauce and vegetable oil. Toss. Season with salt and pepper.
  • Arrange potatoes, onions and carrots in a shallow baking tray. Add garlic and rosemary. Bake for about 20 minutes or until the potatoes are tender.
  • Meanwhile, heat a frying pan over high heat. Add sausages. Cook, turning, for about 4 minutes or until the sausages are brown all over.
  • Transfer sausages to the baking tray. Add cherry tomatoes.
  • Bake for a further 10 minutes or until the sausages are cooked through and tomatoes begin to collapse.
