Broccoli paneer. The vibrant broccoli and soft paneer comes together in this recipe to create a healthy stir fry in minutes. While blanching broccoli prior to stir frying keeps it tender and crisp, pan frying paneer brings in that crispy exterior. The incredible flavors are accentuated with the addition of oregano and cumin.
Broccoli Paneer Recipe
Prep the ingredients – The broccoli florets need to be blanched in simmering water until they are tender. In order to retain the vibrant green, make sure you don’t overcook the florets. Blanching will only require about 2-3 minutes depending on the size of the florets. To prep paneer, cut into small cubes, and season with salt and pepper. Fry the cubes until all the sides are brown.
Stir fry – You can use either butter or ghee to stir fry veggies and paneer. Start with sautéing ginger and garlic followed by precooked ingredients alongside a few elements for added flavor. This includes oregano, red chili flakes and ground cumin. A splash of fresh lemon juice is an absolute game changer. This stir fry is perfect as a healthy high protein salad. It’s also an amazing side for rice or naan.

Broccoli Paneer
Healthy spiced stir fry made with broccoli and paneer. Serve this as a salad or side.
Ingredients
- 1 medium head broccoli, broken into florets
- Water, to cook broccoli
- 1 tablespoon oil
- 250 g paneer (Indian cheese), cut into cubes
- 1 tablespoon butter or ghee
- 2 teaspoons minced ginger
- 2 teaspoons minced garlic
- 1 teaspoon dried oregano
- 1 teaspoon red pepper (chili) flakes
- 1/2 teaspoon ground cumin
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
- Chopped parsley leaves, to garnish
- Almonds or cashew nuts, to garnish (optional)
Instructions
- Bring a large pot of water to a boil. Make sure there’s enough water to cover the broccoli florets.
- Add broccoli. Cover with a lid, and blanch for 2-3 minutes or until the florets are tender, but green and crisp.
- Drain and set aside.
- Meanwhile, season paneer with salt and pepper.
- Heat oil in a frying pan or skillet over medium-high heat.
- Add paneer. Fry until browned on one side, for about 2-3 minutes or until browned. Flip to fry the other sides. Remove from pan. Set aside.
- Add butter or ghee.
- When hot, add broccoli, paneer, ginger, garlic, oregano, red pepper (chili) flakes, ground cumin, and lemon juice. Season with salt and pepper.
- Stir fry for 1 minute.
- Garnish with chopped parsley leaves.
Notes
- You can either serve this as a salad, or as a side for rice and naan
