Spiced stuffed twice baked potatoes. A hybrid of a basic baked potato, this recipe combines potatoes with spiced paneer or Indian cottage cheese. They get an extra delicious kick of flavor from chili infused butter. A generous sprinkle of parsley adds mouthwatering flavor to the dish. Delicious!

Spiced Stuffed Baked Potatoes Recipe
- Bake potatoes – Prick the potatoes with fork, and drizzle with oil, salt and pepper. Let the potatoes cook in the oven until fork tender. Place a few garlic cloves in aluminum foil and bake alongside potatoes.
- Make chili butter – Mix together softened butter, red chili flakes and chopped parsley. Combine to make a smooth paste.
- Make stuffing – The stuffing is a simple combination of paneer (Indian cottage cheese), ground cumin, paprika and the roasted garlic. Finally, mix the stuffing with chili butter. If you don’t like paneer, you can easily swap it with your favorite protein like tofu, chicken or meat.
- Bake the potatoes again – You’ll need to stuff the potatoes with the mixture. Bake this again for another 10 minutes. For the finishing touch, garnish with parsley.

Twice baked potatoes loaded with spiced paneer and chili butter
Ingredients
Baked potatoes:
- 4 large potatoes
- 2 tablespoons olive oil
- 3 garlic cloves
- Salt and pepper to taste
Stuffing:
- 100 g paneer (Indian cottage cheese), crumbled
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
Chili butter:
- 50 g softened butter
- 1 teaspoon red chili flakes
- 1 teaspoon chopped parsley
Garnish:
- Chopped coriander (cilantro) leaves
Instructions
- Preheat oven to 200 C / 400 F. Line a baking pan with baking paper.
- Prick the potatoes with a fork and place them on a tray. Drizzle with olive oil. Season with salt and pepper. Bake for about 1 hour or until fork tender.
- To make chili butter, combine together butter, red chili flakes and chopped parsley.
- To make stuffing, combine together paneer (Indian cottage cheese), ground cumin, paprika, roasted garlic and chili butter. Season with salt and pepper.
- Cut the top of potatoes.
- Fill with the stuffing.
- Bake again for about 10 minutes.
- Garnish with chopped parsley.
