The best roast potatoes aren’t just delicious, they’re also super easy to make and are guaranteed to rival the popular side dishes. Whether you are looking for a hearty side dish for your Sunday roast (alongside plenty of other veggies, of course) or just want a healthy potato snack to munch on, here’s the perfect recipe for you but with a Greek twist.

This Greek lemon potatoes recipe is not like your regular roast potatoes. These potatoes are not super crispy but loaded with classic Greek flavors that're going to make you drool. Trust me, it’s so good!

As you know, fresh lemons are the superhero ingredient in this recipe. As lemon juice tend to burn the potatoes very quickly, the ideal way to make them is in a pan covered with aluminum foil. That way, the potatoes will cook through perfectly without causing any burning.

Ok, let me walk through the process of making these delicious potatoes.

How To Make Greek Lemon Potatoes

The easy peasy process starts with peeling the potatoes and cutting them into wedges. Now place these in a baking pan and pour in all the other delicious ingredients. This includes chicken stock (broth), garlic, juice and zest of lemons, olive oil, oregano and a pinch of salt.

All the ingredients used in this Greek lemon potatoes recipe are fresh and super flavorful making them utterly delicious. Now all you need to do is toss the potatoes in the flavourful mixture. Make sure they are well coated in it.

Next up, the cooking process. The baking pan goes into the oven, but before that, cover the pan tightly with aluminum foil. Bake for about 45 minutes, remove the foil, and cook for another 15 minutes.

And done! Incredibly flavorful Greek lemon potatoes for your next Greek inspired meal!
