chicken broth
stock

garlic cloves
peeled and minced

olive oil

Juice from 2 large lemons

teaspoon
lemon zest

dried oregano

Salt to taste
Instructions
Preheat oven to 200 C or 400 F.
Place potatoes in a large baking pan.Add chicken broth (stock), minced garlic, olive oil, lemon juice, lemon zest and oregano.
Toss to coat potatoes in the mixture. Season with salt.
Cover tightly with aluminum foil.
Transfer to preheated oven. Bake for 45 minutes. Remove foil and bake for another 15 minutes.

Feel free to use more or less lemons depending on your taste preferences
You can use this lemon mixture to marinate any vegetables like bell peppers (capsicum), zucchini, carrots, sweet potatoes etc
In summer, make this on the grill in a foil pan

If you want to make the potatoes really crispy, turn on the grill, and roast for about 2-3 minutes or until the potatoes start to brown.
