Ingredients

  • 8 large potatoes peeled and cut into wedges
  • ¾ cup chicken broth stock
  • 2 garlic cloves peeled and minced
  • cup olive oil
  • Juice from 2 large lemons
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • Salt to taste

Instructions

  • Preheat oven to 200 C or 400 F.
  • Place potatoes in a large baking pan.Add chicken broth (stock), minced garlic, olive oil, lemon juice, lemon zest and oregano.
  • Toss to coat potatoes in the mixture. Season with salt.
  • Cover tightly with aluminum foil.
  • Transfer to preheated oven. Bake for 45 minutes. Remove foil and bake for another 15 minutes.

  • If you want to make the potatoes really crispy, turn on the grill, and roast for about 2-3 minutes or until the potatoes start to brown.
