Soy pineapple sauce

Start with the basic sauce to flavor this dish. A simple combo of pineapple juice, soy sauce, brown sugar, chicken stock and hoisin sauce. Place all the ingredients in a saucepan and bring to a simmer. You’ll also need a little corn flour dissolved in water to thicken the sauce. Simmer this mixture for about 5 minutes or until it turns into a thick syrup.

Let’s make pineapple chicken

While the sauce is simmering, you can start with stir frying chicken. Season chicken strips and stir fry in a little oil for about 4-5 minutes. Once the chicken is browned, add in the veggies (bell peppers and red onions). When they turn crisp tender, stir in the sauce and stir fry for another 3-4 minutes. Finally, pineapple chunks, fresh or canned, goes into the pan. Give this a quick stir fry, and you’re done.

Finish off with a generous sprinkle of sesame seeds, toasted cashew nuts, and spring onions. Delicious pineapple chicken to serve with rice or noodles!
