How To Make Masala Pappadums

Start with make the quick tomato-onion mixture. All you need to do is combine together fresh tomatoes, red onions, green chilies and white vinegar. Don’t forget to season with salt and pepper. And again, make sure you add more or less vinegar depending on your taste.
While tomatoes and onions are soaking in vinegar and absorbing all the beautiful flavors, deep fry the pappadums until they are crunchy and puffed up. Don’t forget to gently press down on the pappadums to make them flat.

Masala Pappadums | Video
Crunchy pappadums topped with tomato-onion mixture and chat masala. Perfect appetizer for your next gathering!
Ingredients
- 20 pappadums
- Oil, to deep fry
- 4 tomatoes, deseeded and chopped
- 2 red onions, peeled and thinly sliced
- 2 green chilies, chopped
- 4 tablespoons white vinegar
- 2 tablespoons chat masala
- Coriander (cilantro) leaves, to garnish
- Salt to taste
Instructions
- Heat oil for deep frying in a deep saucepan over medium-high heat.
- Fry pappadums, one at a time, and drain on an absorbent towel. While frying, gently press down on the pappadums with a spatula to make them flat.
- To make the tomato onion mixture, combine together tomatoes, onions, green chilies and white vinegar in a large bowl. Season with salt.
- To serve, top the pappadums with tomato mixture.
- Sprinkle with chat masala. Garnish with coriander (cilantro) leaves.
