And here’s another amazing recipe to add to your healthy meal plan – spanakorizo or Greek spinach rice. Super healthy rice loaded with the deliciousness of spinach and dill. Absolutely delicious meal idea!
How To Make Spanakorizo or Greek Spinach Rice
Start with sautéing some onions in a little oil. Fry garlic until fragrant. Add plenty of spinach and dill. Season with salt and pepper. With spinach, you have two options – baby spinach or regular English spinach. Even though both are delicious in this recipe, I prefer the regular ones with large leaves. Just roughly chop them before adding to the pan.
With dill, you can use both stems and leaves. Just chop them roughly. Once the spinach starts to wilt, add rice, parsley and lemon juice. To cook the rice for this Greek spinach rice, you’ll need to use stock or broth instead of water. Trust me, it adds so much flavor to this dish making it unbelievably delicious.
Now, cook rice until it becomes very tender and absorbs the stock. Once cooked, let this rest for about 10 minutes before you fluff the rice with a fork.

Greek Spinach Rice (Spanakorizo)
Deliciously healthy Greek style rice loaded with the goodness of spinach and dill!
Ingredients
- 1 tablespoon olive oil
- 1 cup chopped onions
- 2 garlic cloves, peeled and finely chopped
- 3 cups chopped spinach
- ¼ cup chopped dill leaves
- 4 cups vegetable broth (stock)
- 2 cups basmati, long grain or jasmine rice, rinsed (I used basmati)
- 2 tablespoons chopped parsley leaves
- Juice from 1 lemon
- Salt and pepper, to taste
- Feta, to serve
- Lemon wedges, to serve
- Chopped dill and parsley, to garnish
Instructions
- Heat olive oil in a large saucepan over medium-high heat. Add onions. Saute, stirring occasionally, for 2-3 minutes or until the onions are soft and translucent.
- Add garlic. Saute, stirring, for about one minute or until fragrant. Add spinach and dill. Season with salt and pepper.
- Once the spinach is wilted, add vegetable stock (broth), rice, parsley and lemon juice.
- Bring to a boil. Reduce heat to low. Cook, covered, for 5-6 minutes or until the water is absorbed and rice is tender. (Cooking times may vary depending on the type of rice used. Remember to check the package instructions)
- Remove from heat. Leave it covered for 10 minutes.
- Garnish with feta and chopped dill or parsley.
Notes
- Pairs well with roast beef, chicken, and meat kebabs
- This recipe is for white spanakorizo. To make red spanakorizo, add chopped tomatoes
- If fresh parsley and dill are not easily available, you can use dried parsley and dill
