Insanely Delicious Garlic Mashed Potatoes Recipe
I really love old-fashioned mashed potatoes – so easy to make and always a hit.
Start with roasting the garlic. You’ll only need a few garlic cloves in this recipe as too much garlicky flavor will ruin the dish. Cover all the cloves in an aluminum foil and roast in the oven for about 35-40 minutes. Once cooled, peel the cloves and this will go into the mashed potatoes at a later stage of the cooking process.
Next up, cook the potatoes. The potatoes need to be tender, soft and fluffy. To be exact, easily mashable with a fork or potato masher. And don’t forget to add some salt to the potatoes over the stovetop. If you are after a vegan version of this recipe, don’t forget to reserve some of the cooking liquid. Apart from the roasted garlic, the second key element that makes this garlic mashed potatoes absolutely delish is browned butter. Ingredients
- 5 medium garlic cloves
- 8 large potatoes peeled and cut into cubes
- 100 g butter unsalted
- ½ teaspoon dried oregano
- 3 tablespoons milk
- Salt and pepper to taste
- Butter to garnish
- Dried chili flakes to garnish (optional)
Instructions
- Preheat oven to 200 C / 400 F. Place garlic cloves in aluminum foil. Place on a baking tray. Bake for 30-40 minutes or until the cloves are soft to touch and lightly
browned. When cooled, remove from foil, peel and discard the skin. Set aside. - Meanwhile, boil water in a large saucepan over medium-high heat. Season with salt. Add potatoes. Cook for 20-25 minutes or until the potatoes are tender. Drain. Set aside.
- Place butter in a frying pan over low heat. Add butter.
- When butter starts to brown, remove from heat.
- Add potatoes, roasted garlic, dried oregano and milk.
- Using a fork or potato masher, mash potatoes until fluffy and smooth.
- Top with butter and red chili flakes if you like.
- Serve with your favorite roast.
Notes
- To make the vegan version of this recipe, substitute butter with vegan butter. Also, reserve the cooking liquid from potatoes and use it instead of milk to make fluffy mash.
