Ingredients

  • 5 medium garlic cloves
  • 8 large potatoes peeled and cut into cubes
  • 100 g butter unsalted
  • ½ teaspoon dried oregano
  • 3 tablespoons milk
  • Salt and pepper to taste
  • Butter to garnish
  • Dried chili flakes to garnish (optional)

Instructions

  • Preheat oven to 200 C / 400 F. Place garlic cloves in aluminum foil. Place on a baking tray. Bake for 30-40 minutes or until the cloves are soft to touch and lightly
    browned. When cooled, remove from foil, peel and discard the skin. Set aside.
  • Meanwhile, boil water in a large saucepan over medium-high heat. Season with salt. Add potatoes. Cook for 20-25 minutes or until the potatoes are tender. Drain. Set aside.
  • Place butter in a frying pan over low heat. Add butter.
  • When butter starts to brown, remove from heat.
  • Add potatoes, roasted garlic, dried oregano and milk.
  • Using a fork or potato masher, mash potatoes until fluffy and smooth.
  • Top with butter and red chili flakes if you like.
  • Serve with your favorite roast.

Notes

    • To make the vegan version of this recipe, substitute butter with vegan butter. Also, reserve the cooking liquid from potatoes and use it instead of milk to make fluffy mash.
