Preheat oven to 200 C / 400 F. Place garlic cloves in aluminum foil. Place on a baking tray. Bake for 30-40 minutes or until the cloves are soft to touch and lightly
browned. When cooled, remove from foil, peel and discard the skin. Set aside.
Meanwhile, boil water in a large saucepan over medium-high heat. Season with salt. Add potatoes. Cook for 20-25 minutes or until the potatoes are tender. Drain. Set aside.
Place butter in a frying pan over low heat. Add butter.
When butter starts to brown, remove from heat.
Add potatoes, roasted garlic, dried oregano and milk.
Using a fork or potato masher, mash potatoes until fluffy and smooth.
Top with butter and red chili flakes if you like.
Serve with your favorite roast.
