Moving onto today’s recipe, this egg samosa is all about combining a few humble ingredients to create an amazing snack for your family. Eggs cooked in delectable masala is covered in crispy filo pastry to make the ultimate snack. Well, if you don’t have filo pastry, you can obviously make this with puff pastry, spring roll pastry, or even pastry made from scratch.
Key ingredients
The key ingredient is, obviously, eggs. Hardboiled eggs are peeled and then chopped very finely so they’ll get coated in beautifully delicious masala. To make the masala, first, splutter some cumin seeds and then sauté onions until soft. Fry up some minced garlic and ginger, followed by sauteeing the spices like ground turmeric, ground coriander and red chili powder. Add garam masala, green peas and coriander leaves. Season with a little salt before adding in chopped eggs. Now let this mixture cool down completely.
Choose your favorite pastry
Well, I opted for filo pastry in this egg samosa recipe. However, you can easily substitute it with puff pastry (like in this recipe) or spring roll pastry (like in this recipe). You can even make the pastry from scratch (like in this recipe). Now all you need to do is fill the pastry sheets with the egg mixture and roll into triangles. Finally, bake them into golden perfection.

Egg Samosa | Video
Crispy egg samosa filled with egg masala. Perfect accompaniment for your afternoon tea!
Ingredients
- 4 eggs, hardboiled, peeled and chopped
- 1 tablespoon oil
- ½ teaspoon cumin seeds
- 1 small red onion, finely chopped
- 2 teaspoon minced garlic (garlic paste)
- 2 teaspoon minced ginger (ginger paste)
- ¼ teaspoon ground turmeric (turmeric powder)
- 1 teaspoon ground coriander (coriander powder)
- ½ teaspoon red chili powder
- 1 teaspoon garam masala
- 2 tablespoons chopped coriander (cilantro) leaves
- ½ cup green peas (I used frozen peas)
- Salt to taste
- 4 sheets of filo pastry, each cut horizontally into four rectangles
- 1 egg, lightly whisked
Instructions
Egg filling:
- Heat oil in a medium frying pan over medium-high heat.
- Add cumin seeds and allow to splutter.
- Add red onions. Sauté, stirring occasionally, for 2-3 minutes or until soft and translucent.
- Add minced ginger and garlic. Sauté, stirring, for a minute or until fragrant.
- Add ground turmeric, ground coriander and red chili powder. Sauté, stirring, for a minute or until aromatic.
- Add garam masala, green peas and chopped coriander (cilantro) leaves. Sauté, stirring occasionally, for 2 minutes. Season with salt.
- Add hardboiled chopped eggs. Stir to combine. Heat through. Set aside to cool completely.
Filo pastry samosas:
- Preheat oven to 180C / 350F. Line a baking tray with baking paper. Set aside.
- Place a sheet of rectangular filo pastry on a flat work surface. Place a tablespoon of egg filling on one side of the pastry sheet. Fold into a triangle. Repeat with the remaining pastry sheets. Set aside.
- Place prepared samosas on the baking tray in a single layer. Bake for about 25 - 30 minutes.
- Serve with your favorite dipping sauce.
