Ingredients

  • 4 eggs hardboiled, peeled and chopped
  • 1 tablespoon oil
  • ½ teaspoon cumin seeds
  • 1 small red onion finely chopped
  • 2 teaspoon minced garlic garlic paste
  • 2 teaspoon minced ginger ginger paste
  • ¼ teaspoon ground turmeric turmeric powder
  • 1 teaspoon ground coriander coriander powder
  • ½ teaspoon red chili powder
  • 1 teaspoon garam masala
  • 2 tablespoons chopped coriander cilantro leaves
  • ½ cup green peas I used frozen peas
  • Salt to taste
  • 4 sheets of filo pastry each cut horizontally into four rectangles
  • 1 egg lightly whisked

Instructions

Egg filling:

  • Heat oil in a medium frying pan over medium-high heat.
  • Add cumin seeds and allow to splutter.
  • Add red onions. Sauté, stirring occasionally, for 2-3 minutes or until soft and translucent.
  • Add minced ginger and garlic. Sauté, stirring, for a minute or until fragrant.
  • Add ground turmeric, ground coriander and red chili powder. Sauté, stirring, for a minute or until aromatic.
  • Add garam masala, green peas and chopped coriander (cilantro) leaves. Sauté, stirring occasionally, for 2 minutes. Season with salt.
  • Add hardboiled chopped eggs. Stir to combine. Heat through. Set aside to cool completely.

Filo pastry samosas:

  • Preheat oven to 180C / 350F. Line a baking tray with baking paper. Set aside.
  • Place a sheet of rectangular filo pastry on a flat work surface. Place a tablespoon of egg filling on one side of the pastry sheet. Fold into a triangle. Repeat with the remaining pastry sheets. Set aside.
  • Place prepared samosas on the baking tray in a single layer. Bake for about 25 - 30 minutes.
  • Serve with your favorite dipping sauce.
