Heat oil in a medium frying pan over medium-high heat.
Add cumin seeds and allow to splutter.
Add red onions. Sauté, stirring occasionally, for 2-3 minutes or until soft and translucent.
Add minced ginger and garlic. Sauté, stirring, for a minute or until fragrant.
Add ground turmeric, ground coriander and red chili powder. Sauté, stirring, for a minute or until aromatic.
Add garam masala, green peas and chopped coriander (cilantro) leaves. Sauté, stirring occasionally, for 2 minutes. Season with salt.
Add hardboiled chopped eggs. Stir to combine. Heat through. Set aside to cool completely.
