Make authentic restaurant style tempura with easy and perfect tempura batter recipe!
Ingredients
- 1 cup all purpose (plain) flour
- 1 egg, lightly whisked
- 1 cup chilled soda water
- Sliced vegetables or protein
- Oil for deep frying
- tempura dipping sauce, to serve
Instructions
- Heat oil (for deep frying) in a large saucepan over medium heat.
- Sift flour into a large bowl.
- Add egg.
- Add chilled water, gradually, and stir constantly to make a batter with pouring consistency.
- Make sure there are some lumps in the batter. You can store this batter in the refrigerator for a few minutes if needed.
- Dip vegetables in batter, shake off excess and add to hot oil. Do not overcrowd the pan.
- Flip and cook until all sides are golden and the veggies are cooked through.
- Drain on an absorbent paper towel.
- Serve with tempura dipping sauce

- Some lumps in the batter is totally okay
- You can refrigerate the batter for a few minutes, make sure you don’t leave it in the refrigerator for too long
