Of all the beautiful vibrant fruits out there, mangoes are my absolute favorites. I know I’ve said this umpteen times, honestly, I’m a little obsessed with these yellow beauties. As much as I adore this summer fruit, I also love desserts made with mangoes. Just because I think that the natural yellow hue from mangoes make desserts so pretty.
Coming to the recipe for this yummilicious Thai style mango coconut pudding highlights the tropical flavors of mangoes and coconut. Two simple ingredients join hands to create an utterly delicious pudding. This is obviously one of the easiest desserts to make especially if you are feeding a crowd.
Luscious pudding with tropical flavors
To make this mango-licious treat, you’ll need ripe, firm, and juicy mangoes. Choose mangoes that are sweet and have a bright yellow color. Mangoes need to be perfectly ripe to create the right flavor for this dessert. All you need to do is scoop out the flesh and grind to make a very smooth purée.
Coconut, the second element of this mango coconut pudding, is added in the form of coconut milk. In my opinion, the combination of coconut and mango is just heavenly. Coconut milk stands as the supporting actor in this recipe complementing the flavor of the hero ingredient, mangoes. Who doesn’t love this magic combo in a dessert? It’s phenomenal!
As we are talking about an easy to make dessert, I decided to go with canned coconut milk. Just make sure you use high quality coconut milk to create the perfect dessert. Depending on the sweetness of the mangoes, you can also add in a little sugar. Now, to achieve the right consistency, you’ll need to set the pudding using gelatin. Sprinkle some gelatin powder over boiling water and stir to dissolve. White sugar goes straight into this mixture and stir again until it dissolves. Next up, add in mango purée and coconut milk. Stir to combine.
Pour this mango coconut pudding mixture into moulds and leave to set in the refrigerator. Before serving, top with your favorite garnishes.

Spray the leaves with a little water and then gently press them onto the sides of the glass before pouring in the pudding mixture 🙂
