  • 1 kg whole duck cut into medium sized pieces
  • 5 - 6 garlic cloves
  • 1 inch piece ginger
  • 3 - 4 small green chillies
  • 2 teaspoon ground coriander
  • ½ teaspoon ground turmeric
  • 1 teaspoon garam masala

Instructions

To make spicy duck:

  • Place ginger, garlic and green chilies in a blender. Add a little amount of water, and grind to a smooth paste.
  • Add in ground coriander, ground turmeric, ground black pepper, garam masala, vinegar, and enough salt to the ginger garlic mixture. Add more water (only if necessary) to make a smooth paste.
  • Marinate duck pieces for about one hour in the refrigerator.
  • Now preheat the oven to 200 degree Celsius(180 degree Celsius for fan forced oven).
  • Place the marinated duck pieces on a baking tray lined with grease-proof paper.
  • The spicy duck will be ready in 45 – 50 minutes.

To make herbed yogurt dip

  • Place all the ingredients except garam masala in a deep bowl.

I first had duck recently on a trip to Quebec, and I was surprised by how tender it was I am just not brave enough to try it at home....I think this looks simple enough for a first try, thank you for sharing 🙂
