Indian egg stew. Perfectly cooked eggs in coconut milk based sauce. It’s creamy, comforting, and easy to make. This lazy day stew recipe comes together in under 30 minutes, and is perfect with rice or your favorite flatbreads. I’ll show you how I make it at home, a few useful tips I have picked up over time, and the ways I enjoy serving it most.

Why I Love This Flavor Packed Stew
I first started making this easy stew on those days when I didn’t want to make the usual egg curry, or scrambled eggs. The creamy, aromatic stew is special enough for a luxurious weekend brunch but simple and hearty for a weekday dinner. The one thing that I love about this recipe is the coconut-based sauce or gravy. Every spoonful is loaded with the unmistakable flavors of coconut milk, ginger, garlic, green chilies, curry leaves, and whole spices. I don’t find it overwhelmingly spicy, which is exactly what I want. If you enjoy South Indian food, there’s a good chance this simple stew will become one of those recipes you return to again and again. And honestly, I understand why. It is the kind of side that makes a plain bowl of rice, crusty bread, or appams (rice pancakes) feel like a proper meal.
This mildly spiced dish features boiled eggs simmered in a fragrant, coconut-based sauce. Unlike many Indian egg curries, it doesn’t rely on thick tomato gravy or a heavy blend of spices. Instead, the flavor comes from the combination of coconut milk, whole spices, aromatics, and perfectly cooked eggs. If you prefer more heat, you can easily add a few extra green chilies.
One reason I like this recipe is that the ingredient list looks longer than the actual cooking process. Also, you can experiment with different types of veggies including carrots, green beans, peas, bell peppers (capsicum), and mushrooms. Just remember that the more vegetables you add, the more the dish starts moving from a simple egg based curry toward a vegetable stew. This dish is simply perfect for days when you don’t have much planned for dinner, a few eggs, whole spices, coconut milk, and some veggies can come to your rescue.
Key Ingredients In Indian Style Egg Stew
- Eggs - Hard boil and cut into halves.
- Coconut milk - Flavor and creamy texture.
- Whole spices - Cinnamon, cloves, cardamom.
- Powdered spices - Garam masala, ground black pepper.
- Herbs - Curry leaves.
- Cashew nuts and raisins - For tempering.
How To Make Indian Egg Stew
Step One - Boil the Eggs
Start by placing the eggs in a large saucepan and covering them with water. Cook eggs for about 8-10 minutes. Once cool enough to handle, peel the eggs. I like to cut them into halves. You can also make a few shallow cuts around each eggs. However, this isn’t essential.
Step Two - Prep the Veggies
Peel and chop potatoes and carrots into small, even pieces. You can either boil them separately until just tender, or simply cook them directly into the stew.
Step Three - Temper the Whole Spices
Heat oil in a deep pan over medium heat. Add the whole spices including cinnamon, cloves, and cardamom. Let them sizzle for a few seconds. Be careful not to burn the spices.
Step Four - Add onions, chilies, curry leaves
Add sliced onions alongside chilies and curry leaves. Let the onions become soft and translucent. You don’t need to brown them.
Step Five - Add Ginger and Garlic
Add ginger and garlic. Saute for about 30 seconds to release their aroma.
Step Six - Add Vegetables and Coconut Milk
Add the veggies and pour in the thick coconut milk or coconut cream and a little water. Stir gently and bring everything to a simmer. Cover the pan and cook until the vegetables are tender.
Step Seven - Add Eggs and Garam Masala
Let the eggs simmer in the coconut sauce for a few minutes so they can absorb some of the flavor. You can gently rotate the eggs in the pan rather than stirring aggressively.
Step Eight - Finish with Coconut Milk
After adding the coconut milk, stir gently, and keep it on low heat. Avoid bringing the stew to a vigorous boil.
Step Nine - Add Tempering
Simply sauté sliced onions, cashew nuts, raisins, and curry leaves in a little coconut oil. Wait until onions turn brown and crisp. Add the tempered spices to stew.

Appam (laced pancakes) is one of the most popular traditional accompaniments for egg stew. It also pairs well with parotta, bread, dosa, and plain or ghee rice.
Can I make Indian egg stew without potatoes?
Yes. You can leave them out or replace them with other vegetables like green peas, green beans, carrot, cauliflower, or asparagus.
