- Salt and pepper to taste
Chicken chipotle mix:
- ½ cup chipotle sauce, homemade or store bought
- 2 teaspoons honey
Quesadillas:
- 100 g butter, unsalted
- 20 tortillas
- 2 cups shredded mozzarella
- 1 cup sliced red onions
To serve:
- Extra chipotle sauce
Garnish:
- Coriander (cilantro) leaves
Instructions
Cook chicken:
- Place chicken on a baking sheet.
- Add chipotle seasoning, honey, olive oil, and lemon juice. Season with salt and pepper.
- Coat chicken with the marinade.
- Marinate for about 30 minutes in the refrigerator, if time permits.

- Add 2 teaspoons butter to a frying pan or skillet over medium heat.

- Fold the tortilla over.
