Oyster sauce beef. This quick, flavour-packed dish features marinated thin slices of beef cooked until tender, then tossed in a rich oyster sauce glaze with garlic, ginger, and a handful of crisp vegetables. The combination of savory, slightly sweet, and  irresistible umami flavors makes you want to go back for another bite.  Best of all, it comes together in one pan in under 30 minutes, making it perfect for a busy weeknight. Serve it over steamed rice or noodles, and you have a restaurant-style meal that’s surprisingly easy to make at home.

Why I Love This Takeaway Classic

That moment when you lift the lid of a Chinese takeaway, and the aroma hits you before you’ve even taken the first bite. The rich, glossy sauce clinging to tender strips of beef, sweet onions and other vibrant veggies tucked in between that makes you want to go back for just one more mouthful. For a long time, I simply thought I could never recreate it at home. Then I decided to try. After a few attempts, and plenty of tasting along the way, I made the quick and more delicious version of the takeout favorite.

The secret? Choose the right tender cut like sirloin, rump, or flank (flat iron), then slice it thinly across the grain. Velvet the beef with a little baking soda. Plus, beef doesn’t need a complicated marinade. A little ground pepper, soy sauce, oyster sauce, cornstarch (corn flour), and neutral oil is enough. 

Build the sauce before you start cooking. Make sure the sauce is mixed, and the aromatics and veggies are chopped before the beef hits the pan. The simple sauce is a mixture of oyster sauce, dark soy sauce, and sesame oil. Sear the beef quickly in a very hot pan, and let the meat strips catch some color. When the aromatics and veggies hit the pan, the kitchen fills with that warm, fragrant combination that takes me straight back to the takeaway meals. 

The best part? You can keep this stir fry simple, or make it your own. I enjoy changing the ingredients depending on what’s in the fridge. Broccoli is brilliant with rich oyster sauce, snow peas add a lovely crunch, bell peppers (capsicum) bring sweetness and color, and fresh chilies give everything a welcome kick. Drizzle toasted sesame oil over the beef strips for a richer sauce. And I always serve this dish with steaming jasmine rice. 

Next time you’re tempted to open the takeaway menu, put the phone down, and reach for the wok instead. Slice the beef, turn up the heat, and give it a go. You might discover that the most satisfying takeaway dinner is the one you make yourself.

  • Beef - Sirloin, rump, flank (flat iron).
  • Oyster sauce - Umami and subtle sweetness.
  • Aromatics - Garlic and ginger.
  • Vegetables - Onions, broccolini.
  • Cornstarch (corn flour) - Gives beef crisp exterior, and creates a glossy, thick sauce.

How To Make Oyster Sauce Beef

Prep the ingredients - Chop ginger and garlic, slice onions and broccoli, and measure the sauces. Whip up the stir fry sauce consisting of oyster sauce, soy sauce, and sesame oil. Slice beef, velvet to make it tender, and marinate for about 15 minutes.

Make the stir fry - First, get the wok really hot. If the wok isn’t hot enough, you’re essentially steaming the beef instead of giving it that lovely seared flavor. Add a little to the hot wok, then add the beef. If you are cooking a larger amount, don’t throw it all in at once. Cook in batches so each piece has a chance to hit the hot surface. And remove the strips from wok while it’s just shy of being done. That way, it will go back to the wok later with the sauce, and finish cooking without becoming tough.

Once the beef is out, add garlic, ginger, broccoli, and onions. This is when your kitchen starts smelling amazing like a Chinese takeaway. Let the veggies soften slightly, then add beef back into the wok. Pour in the sauce, and give everything a good toss. You want the sauce to turn glossy, and cling to the beef.

Ingredients

Stir fry sauce:

  • 2 tablespoons oyster sauce
  • ½ tablespoon dark soy sauce
  • 1 teaspoon sesame oil

Marinate beef:

  • 600 g rump, sirloin, flank (flat-iron), rib eye
  • ¼ teaspoon baking soda
  • ½ teaspoon ground white pepper
  • ½ teaspoon granulated (caster) sugar
  • 1 teaspoon light soy sauce
  • 1 teaspoon oyster sauce
  • 1 tablespoon cornstarch (corn flour)
  • 1 tablespoon vegetable oil

Stir fry:

  • 1 tablespoon oil
  • 2 garlic cloves, sliced
  • 2 cm ginger, sliced
  • 5 broccolini stems, diced
  • 1 small onion, sliced
  • 2 teaspoons Chinese cooking wine or mirin

Instructions

Stir fry sauce:

  • Combine together oyster sauce, dark soy sauce, and sesame oil in a small bowl.

Marinate beef:

  • Slice beef thinly against the grain.
  • Add baking soda. Toss.
  • Cover and refrigerate for about 15 minutes.
  • Add ground white pepper, sugar, soy sauce, oyster sauce, and cornstarch (corn flour). Toss to combine.
  • Add oil. Toss. Coat beef strips in the marinade. Cover and refrigerate for about 15 minutes.

Make the stir fry:

  • Heat a large wok or frying pan over high heat. Add oil.
  • When oil is hot, add beef. Stir fry for about 3-4 minutes or until cooked through. Remove beef from pan.
  • Add more oil if needed. Add garlic, ginger, broccolini, and onions. Stir fry for about 2-3 minutes or until the veggies are tender yet crisp.
  • Return beef back to the pan. Add stir fry sauce and cooking wine or mirin. Stir fry for about 1-2 minutes.

Notes

  • Vegetables - You can use any vegetables like mushrooms, carrots, broccoli.
