Oyster Sauce Beef

Ingredients

Stir fry sauce:

  • 2 tablespoons oyster sauce
  • ½ tablespoon dark soy sauce
  • 1 teaspoon sesame oil

Marinate beef:

  • 600 g rump, sirloin, flank (flat-iron), rib eye
  • ¼ teaspoon baking soda
  • ½ teaspoon ground white pepper
  • ½ teaspoon granulated (caster) sugar
  • 1 teaspoon light soy sauce
  • 1 teaspoon oyster sauce
  • 1 tablespoon cornstarch (corn flour)
  • 1 tablespoon vegetable oil

Stir fry:

  • 1 tablespoon oil
  • 2 garlic cloves, sliced
  • 2 cm ginger, sliced
  • 5 broccolini stems, diced
  • 1 small onion, sliced
  • 2 teaspoons Chinese cooking wine or mirin

Instructions

Stir fry sauce:

  • Combine together oyster sauce, dark soy sauce, and sesame oil in a small bowl.

Marinate beef:

  • Slice beef thinly against the grain.
  • Add baking soda. Toss.
  • Cover and refrigerate for about 15 minutes.
  • Add ground white pepper, sugar, soy sauce, oyster sauce, and cornstarch (corn flour). Toss to combine.
  • Add oil. Toss. Coat beef strips in the marinade. Cover and refrigerate for about 15 minutes.

Make the stir fry:

  • Heat a large wok or frying pan over high heat. Add oil.
  • When oil is hot, add beef. Stir fry for about 3-4 minutes or until cooked through. Remove beef from pan.
  • Add more oil if needed. Add garlic, ginger, broccolini, and onions. Stir fry for about 2-3 minutes or until the veggies are tender yet crisp.
  • Return beef back to the pan. Add stir fry sauce and cooking wine or mirin. Stir fry for about 1-2 minutes.

Notes

  • Vegetables - You can use any vegetables like mushrooms, carrots, broccoli.
