Last week, a day before our usual shopping day, I found plenty of leftover bread in the pantry. Snacks with bread are always versatile and make a real treat. So I made up my mind to really show off my love for bread snacks with savory toast roll ups.
These toast roll ups remind me of the real potential of a loaf of bread beyond regular toasts and puddings. When fried, these roll ups hold their shape really well, and the crunchy-chewy texture is simply amazing.
These roll ups are called bread rolls in Kerala. Toasts with savory filling rolled to form little cylinders. I guess that makes sense.
The original classic filling is made up of few veggies and plenty of spices. But, given the fact that I wanted to make a simplified version of the filling, I decided to branch out and flavor the vegetables with stock cubes. And this one ingredient makes this snack stand out.
Savory Toast Roll Ups | Kerala Bread Rolls
These Kerala bread rolls are filled with your favourite veggies and deep fried. Absolutely delicious!
Ingredients
Filling:
- 3 teaspoon oil
- 1/4 cup finely chopped onions
- 1 ½ cups finely chopped vegetables of your choice (I used green beans, carrot, broccoli and cabbage)
- 1 chicken stock cube
Roll Ups:
- 8 breads (I used 4 white and 4 wholemeal)
- 2 eggs, lightly whisked
- 1 cup breadcrumbs
- Oil for deep frying
- Milk
- Water
- Salt and pepper, to taste
Instructions
- To make the filling, heat oil in a frying pan over medium-high heat. Add onions, and saute for 1-2 minutes or until softened. Add green beans, and sauté again. When the beans are half cooked, stir in carrot, broccoli and cabbage. Crush the stock cube and sprinkle on top. Cook, covered, stirring occasionally, for 2-3 minutes, or until the vegetables are tender. Remove from heat. Set aside.
- To prepare the bread for roll ups, first remove the crusts. Then use a rolling pin to roll the bread flat. Roll them out as thin as possible.
- Place the filling at the bottom end of the bread slices. Roll once inside to cover the filling. Then use water to wet both sides of the bread slices. Fold both the sides inside. Then roll up bread to form cylindrical shapes.
- To seal the edge, dab a little water and roll pressing firmly. Set them aside.
- Spread breadcrumbs in a small dish. To make the egg mixture, combine eggs and a dash of milk. Season with salt and pepper. Set aside.
- Heat oil for deep frying over medium-high heat. Dip the roll ups first in egg mixture, and then roll in breadcrumbs. Place them oil. (fry in batches if needed). Turn occasionally to makes sure all sides are well browned. When done, drain on absorbent towel. Serve warm.
