Caramel Pasta Payasam Recipe
Start with cooking the pasta. Any small pasta works well in this recipe including macaroni, small shells and elbows. I opted for macaroni but feel free to choose your favorite. Again, do not add salt while cooking the pasta. Salted pasta won’t taste good in this dessert recipe.
The base of this recipe comes from the traditional Indian kheer or payasam. Add in pasta and you have a beautiful pudding that’s going to tantalize your taste buds.
The delicious layer of caramel certainly adds a wow factor to this dish. Making caramel is pretty straightforward. Just heat sugar over low heat. Wait until caramel turns golden. Now, pour in milk. Make sure you stir constantly until the caramel dissolves and milk gets a light golden hue.
Next, stir in condensed milk and ground cardamom. Simmer for few minutes and then add ghee and plenty of nuts roasted nuts.

Payasam (kheer) or Indian style pudding featuring pasta with the deliciousness of sweet caramel sauce
Ingredients
- 1/2 cup macaroni
- 1/2 cup white sugar
- 500 ml milk
- 1/2 cup condensed milk
- 1/4 teaspoon ground cardamom (cardamom powder)
- 1 tablespoon ghee
- 1/4 cup cashew nuts, almonds and raisins, roasted in 2 tablespoons ghee
Instructions
- Place a large pot of water over high heat. Bring to a boil.
- Add macaroni. Cook, for about 9-10 minutes or until al dente. Drain. Set aside.
- Place a large frying pan over low heat.
- Add sugar.
- When sugar caramelizes and turns golden (this will take about 4-5 minutes), pour in milk, stirring constantly. Continue stirring for about 2-3 minutes or until caramel dissolves.
- Stir in condensed milk and ground cardamom.
- Increase heat to medium.
- Simmer for about 2 minutes.
- Stir in ghee and roasted nuts.
- Garnish with more roasted nuts if you like.
Notes
- Macaroni can be substituted with small shells or elbows if you like. Gluten free pasta also works well in this recipe.
