Kachapuri (Georgian cheese bread). The ultimate cheesy bread you could ever imagine! This classic bread features a crispy crust stuffed with cheese and egg cooked to your liking. Dip bread in warm ooey gooey cheesy mixture for maximum indulgence. Truly spectacular!
Bread is undoubtedly a popular choice when it comes to everyday meals, but on the other side, making the homemade version also has a reputation for being too tricky. However, there are several classic breads that you can easily make at home with zero knowledge in kneading and baking.
One among them is this kachapuri or Georgian style bread featuring a cheese loaded indulgent carb goodness with a stuffed cheese crust. Topped with an egg, it’s one of the most creative ways to make humble bread. These traditional kachapuris are not always cheese filled and they come in different forms. The boat shaped bread is originally from the south-western province of Georgia and is super popular around the world.
The recipe for this Georgian cheese bread starts with preparing the dough. Although plain or all-purpose flour works well in this recipe, I highly recommend using 00 flour or bread flour. As you know, 00 flour is my favorite to make pizza base, so I chose it for this bread recipe as well.
The dough preparation is very similar to classic bread. The best part is you don’t need any special equipment to make this special bread. All you need to mix warm water, milk, sugar and yeast in a bowl, and stir in the flour when you see bubbles appearing on the surface. You’ll get a very sticky dough which is then transferred to a floured surface. Knead this with more flour to make soft dough.
Next up, make the filling with Monterey Jack cheese, mozzarella and feta in 1:1:2 proportion. I have also added in some chopped parsley leaves for extra flavor.
Now, divide the dough into two equal parts. Place the cheese filling on both sides and roll up to make boat shaped kachapuri. Fill with more cheese and bake. Top with egg and bake again.

Ingredients
Bread dough:
- ½ cup warm milk
- ½ cup warm water
- ½ teaspoon white sugar
- 1 and ½ teaspoon dry active yeast
- 1 and ½ teaspoon olive oil
- 1 and ½ cups 00 flour (or bread flour)
- 1 egg, lightly whisked
- Extra flour, to knead dough
- Salt to taste
Filling:
- 1 cup grated mozzarella
- 1 cup Monterey Jack cheese (or smooth ricotta)
- 2 cups crumbled feta
- 1 tablespoon chopped parsley leaves
Toppings:
- 2 eggs
- Butter, cubed
- Salt and pepper to taste
- Chopped parsley, to garnish
Instructions
Place warm milk, warm water, sugar and yeast in a large bowl. Let stand for about 5 minutes or until creamy foam appears. Add olive oil and flour. Season with salt. Mix to form very sticky dough.
Transfer to a floured surface. Sprinkle with more flour. Knead for about 3 minutes, adding more flour as needed, to form very soft dough. Place in a lightly oiled bowl. Cover and let rise in a warm spot for 1 to 1 and ½ hours or until doubled in size.
Preheat oven to 250 C or 475 F.
Combine together mozzarella, Monterey Jack or ricotta, feta and parsley in a medium bowl. Refrigerate until needed.
Punch down dough and turn out onto a floured surface. Cut in half. Dust a large sheet of baking paper with flour. Place one half of the dough on it and roll out into a square, about 1/8 to ¼ inch thick. Stretch out the corners as needed.
Arrange 2 tablespoons of cheese mixture along the two opposite sides of the rolled out dough, two inches away from the sides. Roll sides up tightly over the cheese mixture to form a boat shape. Pinch and twist the ends to seal.
Cut off excess baking paper around the dough. Place on a baking tray. Repeat with the remaining dough and place on the baking tray. Fill the kachapuris with cheese mixture. Brush bread with lightly whisked egg.
Transfer to oven and bake for about 15 minutes. Using a spoon, push down and form a well in the center of each kachapuri. Crack eggs into the wells.
Return to oven and bake until the eggs are set or cooked to your liking, about 3-4 minutes. Remove from oven. Sprinkle with salt and pepper.
Top with butter and garnish with parsley.
Tear the bread from the sides, dip in the egg cheese mixture and eat.
