Corn ribs. Your favorite ribs recipe just got a major vegetarian upgrade. Sprinkled with spices, these ribs made with corn are baked in the oven to bring you nutritious and delicious appetizers that are guaranteed to wow your guests.
I must admit that I fall hard for fall-off-the-bone, tender ribs oozing with deliciousness. But, I must say, I have a new favorite on my menu, and there are plenty of good reasons to make it.
I’m talking about corn ribs or whole corn cobs that are sliced into long thin segments and baked to perfection. I like to rub them with a few spices to level up the flavor. Delicious!
How To Make Corn Ribs
To make these vegetarian ribs, start with preparing the spice mix. I have only used very few spices in this recipe like ground cumin, smoked paprika and garlic powder. If you want to add a light touch of heat, cayenne pepper will do the magic. And don’t forget a sprinkle of salt and pepper. All you need to do is combine all the ingredients together and rub it on to the corn.
The corn needs to be sliced lengthways to create thin long slices that’ll curl up when baked. And that’s the best part! The curled up corn will resemble ribs. So cool!
After coating the corn ribs with the spices, arrange them in a baking tray. Make sure you place them in a single layer. And finally, bake for about 20-30 minutes. You can also grill them if you like.

A showstopper appetizer featuring corn for your next gathering!
Ingredients
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin (cumin powder)
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 4 sweet corn cobs
- 1 tablespoon oil
Instructions
- Preheat oven to 220 C or 425F. Line a baking tray with baking paper.
- To make the spice mix, combine together garlic powder, ground cumin, paprika and cayenne pepper (if using). Season with salt and pepper. Set aside.
- Using a sharp knife, cut off the bottom (about 1 cm) of the corn cobs. Peel and discard the husks. Remove the fibers underneath.
- Cut the corn cobs into halves. Sit the corn in the flat base, and cut into three equal slices. Make sure the middle is intact to hold the rib together.
- Coat the ribs in oil and spice mix.
- Arrange them on the baking tray in a single layer.
- Bake for 20-30 minutes or until curled and crispy.
- Serve immediately.

- Serve with ranch dressing or your favorite dip
