Chicken rice paper rolls. A simple yet delicious way to eat healthy. These Vietnamese style rice paper rolls are totally customizable with your favorite fillings, and the easy-to-make dip makes them damn delicious.
The fact is that I’m super excited about this recipe as it’s so healthy and packed with fresh ingredients. Gluten free rice papers loaded with cooked chicken, fresh veggies and noodles are dipped in sweet chili sauce. I know, these rolls certainly sound way too good.
I really wanted to highlight the vibrant veggies in this recipe, so you’ll find a variety of green goodies here. I used soy sauce to add plenty of flavor to the chicken. It’s also mildly spiced with paprika. Simple flavors works really well in these chicken rice paper rolls. They complement really well with the rest of the ingredients used in this recipe.
Although I cooked chicken from scratch, leftovers also make a great addition to these delicious rolls. Shredded roast chicken or rotisserie chicken definitely saves your time. Again, you can also use your favorite protein. Feel free to sub chicken with prawns or any meat. The recipe is totally customizable which makes it a favorite in my household.
I think all the veggies in these chicken rice paper rolls are super good for you. Lettuce, carrots, and even mint leaves pair beautifully with the soy flavored chicken. It’s that lovely combo of flavors that make these rolls deliciously awesome.
To finish off the recipe, I also made a sweet chili dip which is actually a basic combo of sweet chili sauce and lime juice. It’s the perfect way to celebrate the lovely sweet and savory combo of flavors happening in these chicken rice paper rolls.

Chicken Rice Paper Rolls
Homemade fresh summer rolls or Vietnamese style rice paper rolls packed with healthy veggies and your favorite protein. Gluten free and totally customizable.
Ingredients
Chicken rice paper rolls:
- 2 cups shredded cooked chicken (see notes)
- 200 g lettuce leaves, shredded
- 1 large carrot, cut into thin strips
- 1 small cucumber, finely sliced
- 50 g rice noodles, prepared as per packet directons
- ½ cup fresh mint (or coriander) leaves
- 12, 20 cm round rice paper sheets
Dipping sauce:
- ¼ cup sweet chili sauce
- Juice of 1 lime
Instructions
Chicken rice paper rolls:
- Fill a large bowl with warm water. Dip rice paper sheets (one at a time) in water and leave it to soften for about 30 seconds. Remove, and place it on a flat work surface. Place chicken, cooked noodles and vegetables at the bottom of the wrapper closest to you in the middle.
- Fold the sides of the wrapper over the filling, and roll from the bottom to enclose the mixture. Continue with the rest of the wrappers and fillings. Set aside.
Dipping sauce:
- Combine together sweet chili sauce and lime juice in a small bowl.
- Serve rice paper rolls with the dipping sauce.
Notes
Marinate 500g boneless chicken with 1 tablespoon soy sauce and 2 teaspoon paprika. season with salt. Cook chicken until tender.
