Vegetable Fried Rice - Indian Style | Video

Ingredients

  • 2 cups basmati rice or long grain rice rinsed (or 4 cups leftover cooked rice)
  • 2 tablespoon oil sesame oil preferred
  • 3 garlic cloves chopped
  • 4 cups vegetables green beans, carrots and green peas
  • 1 tablespoon soy sauce
  • 2 teaspoon white vinegar
  • ¼ teaspoon ground black pepper
  • Salt to taste
  • Chopped spring onions or scallions, to garnish

Instructions

  • Soak basmati rice in water for 20 minutes. Drain. Cook according to packet instructions. (I cooked rice in boiling water for 6-10 minutes). Drain. Set aside.
  • Meanwhile heat oil in a wok or large frying pan over high heat. Add garlic and sauté for 1 minute or until aromatic. Add vegetables. Stir fry for 3-4 minutes or until tender. Stir in cooked rice.
  • Add soy sauce, white vinegar and ground black pepper. Stir fry for 3 minutes.
  • Garnish with chopped spring onions (or scallions).

Notes

- Add more vegetables like bell peppers (capsicum), corn kernels and bean sprouts if you like
- For a spicy version of this vegetable fried rice, add 1 teaspoon green chili sauce.
- You can use white or brown basmati rice in this recipe
