Quick, easy, weeknight dinner ready in just under 30 minutes. Infused with classic Chinese flavors and loaded with plenty of veggies, this vegetable fried rice is big on flavor!
2cupsbasmati rice or long grain ricerinsed (or 4 cups leftover cooked rice)
2tablespoonoilsesame oil preferred
3garlic cloveschopped
4cupsvegetablesgreen beans, carrots and green peas
1tablespoonsoy sauce
2teaspoonwhite vinegar
¼teaspoonground black pepper
Salt to taste
Chopped spring onionsor scallions, to garnish
Instructions
Soak basmati rice in water for 20 minutes. Drain. Cook according to packet instructions. (I cooked rice in boiling water for 6-10 minutes). Drain. Set aside.
Meanwhile heat oil in a wok or large frying pan over high heat. Add garlic and sauté for 1 minute or until aromatic. Add vegetables. Stir fry for 3-4 minutes or until tender. Stir in cooked rice.
Add soy sauce, white vinegar and ground black pepper. Stir fry for 3 minutes.
Garnish with chopped spring onions (or scallions).

- Add more vegetables like bell peppers (capsicum), corn kernels and bean sprouts if you like - For a spicy version of this vegetable fried rice, add 1 teaspoon green chili sauce. - You can use white or brown basmati rice in this recipe
