Cook bacon in batches. Place bacon in a pan over medium-low heat. Cook bacon flipping and turning until it starts to release fat and browns evenly. Reserve fat that can be used to cook other ingredients. Remove cooked bacon from the pan. Set aside.
Add a little reserved fat to the pan. Place hash browns in a single layer in the pan. Add rosemary. Cook 3-4 minutes on each side, flipping and turning, until crispy and brown. Remove from pan. Discard rosemary. Set aside.
Add a little reserved fat to the pan if needed. Crack eggs, one at a time, to the pan. Season with salt and pepper. Cook for 3-4 minutes or until the whites are set. Remove from pan. Set aside.
Add a little reserved fat to the pan. Place buns cut side down onto the pan and toast for about 30 seconds- 1 minute or until the buns are toasted.
To assemble the burger, spread the bottom buns with avocado aioli. Place the remaining ingredients on the top in this order - burger patties,hash browns, bacon, fried egg, shredded lettuce and top bun.
Serve warm.

I opted for brioche buns in this recipe, however you can also use regular hamburger buns, bagels, potato buns, English muffins, Turkish rolls etc
