Preheat oven to 190 degree Celsius.
Place chopped strawberries, icing sugar, and vanilla essence in a deep bowl. Mix well. Set aside.
Thaw 3 puff pastry sheets.
Use a round cookie cutter to cut out 9 circles from each sheet.Place one square piece of chopped chocolate over one puff pastry circle. Top it with a teaspoon of strawberries.
Place another pastry circle on top of it, and use a little amount of water to seal the edges.
Use a fork to seal the edges really well (as in the picture).
Continue the process until all the puff pastry circles are used up. (I’d one extra pastry circle in the end)
Line a baking tray with baking paper or parchment paper. Arrange the prepared pastries on the tray.
Make sure the tray is not too crowded. Leave a little space between the pastries, so they can puff up.
Sprinkle the pastries with white sugar. Place the tray in the oven. Bake for 15 to 20 minutes or until golden.
