1-2green chiliesfinely chopped (optional) (I didn’t use them)
½teaspooncumin seeds
½teaspoonground turmeric
¼cupgrated coconut
1sprig of curry leaves
1tablespoonoil
Salt to taste
Instructions
Heat oil in a large pan over medium-high heat. Splutter cumin seeds.
Add onion, garlic and curry leaves. Saute, stirring occasionally for 2-3 minutes or until onions turn golden.
Stir in spinach, coconut, ground turmeric, green chilies (if using) and enough salt. Cook, covered, for 3-4 minutes or until spinach is tender. Remove from heat. Serve warm with rice.
