Ingredients

  • 3 and ½ cups roughly chopped spinach
  • 2 garlic cloves finely chopped
  • 1 tablespoon finely chopped red onion or shallots
  • 1-2 green chilies finely chopped (optional) (I didn’t use them)
  • ½ teaspoon cumin seeds
  • ½ teaspoon ground turmeric
  • ¼ cup grated coconut
  • 1 sprig of curry leaves
  • 1 tablespoon oil
  • Salt to taste

Instructions

  • Heat oil in a large pan over medium-high heat. Splutter cumin seeds.
  • Add onion, garlic and curry leaves. Saute, stirring occasionally for 2-3 minutes or until onions turn golden.
  • Stir in spinach, coconut, ground turmeric, green chilies (if using) and enough salt. Cook, covered, for 3-4 minutes or until spinach is tender. Remove from heat. Serve warm with rice.
