Cut pork into small cubes. Set aside. Slice ginger, garlic, and onion. Set aside.
Place pork in a pressure cooker, and mix well with all the ingredients under “To Cook Pork in Pressure Cooker”. (NOTE: Do not add water). Cover the cooker with its lid, and cook over high flame until 5-6 whistles.
When ready, open the lid of the cooker and simmer over a medium flame until all water dries out. Set aside.
Meanwhile, place a heavy bottomed pan over medium heat. Heat oil in the pan, and add mustard seeds. Allow to splutter.
Now add the whole spices (cardamom, cloves, cinnamon stick, star anise, bay leaf), and fry for a few seconds. Add the chopped shallots or onions and fry again until they get a light brown color. When done, add the coconut slices and curry leaves. Fry again for a minute.
Throw in the cooked pork. Fry, stirring occasionally, until it gets a good color. Serve warm.
