Preheat oven to 200 C / 400 F. Line a baking pan with baking paper.
Prick the potatoes with a fork and place them on a tray. Drizzle with olive oil. Season with salt and pepper. Bake for about 1 hour or until fork tender.
To make chili butter, combine together butter, red chili flakes and chopped parsley.
To make stuffing, combine together paneer (Indian cottage cheese), ground cumin, paprika, roasted garlic and chili butter. Season with salt and pepper.
