Ingredients

Baked potatoes:

  • 4 large potatoes
  • 2 tablespoons olive oil
  • 3 garlic cloves
  • Salt and pepper to taste

Stuffing:

  • 100 g paneer Indian cottage cheese, crumbled
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • Salt and pepper to taste

Chili butter:

  • 50 g softened butter
  • 1 teaspoon red chili flakes
  • 1 teaspoon chopped parsley

Garnish:

  • Chopped coriander cilantro leaves

Instructions

  • Preheat oven to 200 C / 400 F. Line a baking pan with baking paper. 
  • Prick the potatoes with a fork and place them on a tray. Drizzle with olive oil. Season with salt and pepper. Bake for about 1 hour or until fork tender. 
  • To make chili butter, combine together butter, red chili flakes and chopped parsley.
  • To make stuffing, combine together paneer (Indian cottage cheese), ground cumin, paprika, roasted garlic and chili butter. Season with salt and pepper.
  • Cut the top of potatoes.
  • Fill with the stuffing.
  • Bake again for about 10 minutes.
  • Garnish with chopped parsley.
