Preheat oven to 200 C / 400 F
Place one thawed puff pastry sheet on a flat work surface.
Place a large bowl on the pastry sheet and cut out a large circle. Repeat with the other pastry sheet. Set aside.
Place one pastry sheet on a flat work surface
Spread evenly with cinnamon sugar
Top with another puff pastry sheet
Place a small bowl in the center of the pastry sheet
Using a sharp knife or pizza cutter, cut from the edge of the bowl outward to make 16 wedges around the bowl.
Remove the bowl
Twist two of the wedges in toward each other and then pinch them together to seal.
Repeat the process to make 8 points to the snowflake
Brush the pastry with melted butter
Bake until the pastry is golden and puffed, about 20-25 minutes
Dust with powdered (icing) sugar
